This is a particular type Tieguanyin that can be aged like the best puerh teas. This means that the tea is fermented and will get better over the years. Therefore this tea has a taste more similar to a darker Dahongpao, but with the sweet aftertaste of the best Tieguanyin.
Hours after drinking, you will probably still be wondering: ‘what's that sweet taste’? It is actually caused by a special feature this Tieguanyin known in Chinese as huigan.
The most famous Chinese tea (although less well known outside of China), is the Tieguanyin or the Iron Goddess of Mercy. Tieguanyin is an Oolong tea, implying that the tea is partly fermented. The tea is produced in the areas around Anxi County, which is located in Quanzhou, Fujian Province. Anxi is regarded by many to be the tea capital of China, and the county is home to an important daily tea market. Tieguanyin has hundreds of variations making it very difficult to judge the quality of each variety. Ultimately, tasting each variety is the only option; also, a good relationship with the tea growers doesn’t hurt.

High quality Tieguanyin can be steeped up to ten times without losing its taste. When drinking Tieguanyin, we recommend that you use porcelain tea ware. Of course, it is best to use the kungfu tea set. However, this tea also has a good taste in a glass or glass tea ware. Before drinking you should rinse the tea and the tea ware. According to the Chinese, drinking the first cup of steeped tea brings bad luck. You should steep the tea each time for 10 to 20 seconds. Use boiling hot water for the best results.
